We Should All Stop and Think

When you grow up in one place all your life, there is a huge tendency to become clouded to how things really are.  We believe what the news tells us or what we hear the old folks talking about, despite if it is true or not.  We take it as being the truth.  Now I am not saying that there isn't some truth in what the news reports or what the folks around us talk about, but can any of us really say that we know everything about any one subject in particular?  I am so proud to be an American!  I am glad that I can live in a place that entitles us to freedom that so many have worked so hard to sustain!  So don't misunderstand this post...I am not being unAmerican!  When we announced that we were moving to the Middle East, so many people were shocked that we would even entertain the thought!  We heard comments about how terrible life was in the Middle East, that we were going to deal with bombings, that we were going to be living around terrorists, and so many more.  This is where my post title comes in...We should all stop and think..... I first hand had to stop and think for myself.  I too grew up in small town America.  I had some of those same thoughts at first, but I made a choice to educate myself about where we were looking at moving to.  I told Clint that I had two conditions that would seal the fate of my decision about the move...#1) Could we go to a Christian church? If so, where? #2) Would there be quality education for our boys?

Well after some research online I found the answer to both of those questions.  We are attending a Christian based church that has Awanas, Youth Group, and many other avenues for worship and service, that bases everything on the Trinity....Father, Son, & Holy Spirit!  If in my research I couldn't find a place for our family to worship, then that would have been a deal breaker.  I have recently learned some information about the church and the way that it came into being that makes me know that God's hand is at work....  As you know the religion of this region is primarily Muslim, but because of the work of some of God's people that have worked through the Mission Hospital here, the rulers of this country made a decree that allowed Christians to build a place for gathering and worshiping here in Abu Dhabi.  At one point in time, the ability for Christians to gather was in jeopardy.  The church was given 30 days to vacate the premises of the building they were using at that time.  On the 29th day, one of the Sheikhs here took his wife to the Mission hospital to have their baby.  There were some complications but the doctor was able to save mom and baby!  The Sheikh was so happy and thankful that he asked the doctor if there was ANYTHING that he could do to thank her....She said as a matter of fact there is, and she told him about the situation with the church.  He said give me a day and I will get back with you about this!  The very next day, the last day that the church had to be in the building, after exhausting all efforts through all possible channels of saving their gathering place, they received a call saying that they did not have to move anywhere.  In fact, they were told that the main Sheikh was making a decree that they could not be touched by anyone.  That they would be given land and that they could build adequate space for what they needed for their "gatherings".  (They use the term "gathering" because although the church was being given this wonderful gift, it still couldn't be recognized as worship because it was not the religion of this region.)  The Sheikh even purchased the buildings that were being currently used from the church at a price that more than covered the cost of the new buildings.  Now what do you think about that?  I think it is pretty AWESOME!

As far as education goes, well that is covered as well.  (So many people think that the internet is a tool used by the Devil, well that very well may happen, but I totally believe that anything can be a tool used for good or for evil!  It's all in the user!!  Just like a gun can not kill someone unless a person picks it up and uses it for that purpose....now this is another topic I could rant about, but I hope you understand my reason for using it as an example at the moment.)  The internet has been an awesome tool for us during this time of our life.... I found us a church, as well as I was able to locate the top notch American school in the area.  The school is well known in this area, so well known that many of the areas most important and high ranking people's children attend this school as well.  Now although it is an American school with an American based education, it doesn't mean that it is only for Americans.  There are many different nationalities attending the school that the boys will be going to in a few weeks.  The school is a private school and they have excellent academic programs as well as they incorporate community service trips and world travel into their curriculum!  Again I say....once in a lifetime opportunity!  

After I was able to answer my two deal breaking questions, I couldn't find any reason not to take advantage of this great opportunity for Clint's career and our family, except FEAR!  But let me quote part of a verse of one of my favorite hymns.... Twas grace that taught my heart to fear, and grace my fears relieved; how precious did that grace appear, the hour I first believed!

So God has brought us to it, and He will bring us through it!

Calories Burned....And then Calories Packed On

Our villa has several amenties that are included in the lease fee....use of the pools, the beach, and a workout room!  I have no excuse not to exercise.  The gym fee has been covered and it is only a short bike ride away or even a walk.  Here is what I have to work with...

You can't see that there is also a set of free weights and some step aerobic steps.  So today, I went and checked this room out! I rode my bike to the rec center, and I did 15 minutes on the treadmill, worked my abs, and worked my thighs.  Note to self...outer thighs are stronger than inner thighs, must work on that!  LOL  So I did a good job today....then....

I cooked and ate dinner.... We had Slow Cooker Beef Tips in Coke Gravy served over white rice with a side of broccoli with cheese sauce.  Then to top that off we had a fudge brownie with a scoop of vanilla ice cream topped with caramelized bananas foster!

So ... yeah... calories burned and then packed right back on!  You only live once right!!!  LOL  So after my dinner had settled (and I had a smaller portion than everyone else), Clint and I went back and worked out again!  This time I did a 12 minute stationary bike ride, abs, arms, rowing machine, and then walked back to the house...oh and we walked there too, so that is included in the workout..LOL!

Now to just keep the work outs up!  I lost 20lbs between January and May and sure don't want to put it back it on...I really would prefer to keep losing.  At least 15 more pounds would be nice!!!

This Week's Menu for Dinner

I am not going to be doing full daily menus... mainly I am just going to post "What's For Dinner?" menus.  For those who aren't familiar with Dinner being used as the word for the evening meal, you could also call it Supper.  Those are interchangeable words in Texas my friends!  So this week's "What's For Dinner?" menu is as follows:

Monday (which was last night): Baked Garlic & Herb Chicken with Potatoes

Tuesday: Taco Tuesday (Chicken Tacos.... this is a tradition we started back home.. Tacos on     
               Tuesdays, pretty much each week the Tuesday meal will be tacos..LOL)

Wednesday:  Beef Tips with Gravy and Rice

Thursday: Dinner with Clint's co-worker ( so I will not be cooking tonight)

Friday: Beef Roast with carrots and potatoes *

Saturday:  Roast Beef Sandwiches (from the roast on Friday)

Sunday:  Chicken Enchiladas

*Plans may change based on the lunch time plans.  Friday we have Red Lobster planned for lunch, so we may need to eat a lighter dinner than roast and potatoes!

I remember hearing that song on the radio as a little girl!  I would sing along.  It still applies to our lives today!  It has become my motto...

Today was a good day!  Clint went to work and the boys and I were just hanging out at the house.  Clint ended up needing me to come and drive him home from work today, so Denver and I took a taxi into the city.  We met up with Clint and I once again ventured out as a driver in this traffic!  I did really well...I didn't even get overwhelmed!  No tears!  No anger!  Yeah....you can see it...that's my cape!  Super Woman's cape is once again flying in the wind!  I am standing with my hands on my hips and my head held high!  Bring it on!

Jesus, is the provider of my strength!  HE is the wind in my cape!

How Many Malls Does One City Need?

Well there is no shortage of places to shop in this town!  It seems that you can't go 2 miles without seeing a mall.  They are further apart than that but there are a lot of malls.  Let's see we have been to the Delma Mall, Mushrif Mall, and Khalydia Mall.......then today I went to the Al Wahda Mall.  All of these malls are in Abu Dhabi.  I still have not gone to the Abu Dhabi Mall, Marina Mall, Al Maria Mall, or Al Raha Mall.  Then there are the three malls that are currently under construction...Capital Mall, Yas Mall, and Deerfield Mall.  So let's get a total count of all the malls both in service and not in service.....That would be 11 malls!  WOW!  Every mall has a grocery store...either a LuLu's or a Carrefour.  Every mall has a large food court plus several major franchise restaurants.  Just about every mall has a movie theater and a kids play place called Sparky's or Kiddy Zone.  The Sparky's has a couple of small roller coasters, bowling alley, arcade games, climbing playing equipment, and pool tables in them.  It just blows my mind at all of the things that are available here.  All you have to do is look around, and you will see the perfect example of exuberant spending and consumption!  

 There are stores of every kind...stores I recognize and stores I don't.  Every store looks expensive.  They may not be extremely pricey but because of how the store is staged and presented, it has the appearance of being expensive.

These two pictures are nice displays but you should see the jewelry stores and stores of Swarovski Crystal.... bling bling baaaazing!  They will blind you !!!  I haven't stepped foot in any of these stores... I have primarily gone to the malls for restaurants and groceries!  Eventually I will have to check out a few of the clothing stores!  Today I was treated to eating at Olive Garden!  Oh it was yummy!  I told Clint where we ate and he was surprised because he didn't know that there was an Olive Garden in Abu Dhabi.... And guess what... directly across the hall from the Olive Garden is a Red Lobster!  I will have to check it out and see if they have the Cheddar Bay Biscuits that we all love!!!





Breakfast from back in the day....

This morning as I was trying to decide what to make for I breakfast I looked in the fridge and my eyes landed on the canned biscuits.  Yes friends, this is a breakfast made from convenience... Cinnamon Sugar Crusted Biscuits!  My mom used to make these for my sisters and I when we were young, and I bet many of you have had them too!  Super simple....Super good!

Here's what you will need:

Can of 10 count biscuits
3 Tbsp butter, melted
1 cup of sugar
2 Tbsp of cinnamon

Preheat your oven to the temp on your biscuit can.  Melt the butter in a bowl.  Mix the cinnamon and sugar in a separate bowl.  Dip each biscuit in the butter and then the cinnamon sugar mixture.  Make sure to coat all sides of the biscuit.  Then space the biscuits evenly on a baking sheet lined with foil or into a muffin tin that has been lightly coated with non-stick spray.  Once you have all the biscuits coated with goodness, put them in the oven for about 7-8 min or until they are done.  They should come right out of the pan...no sticking! YUM YUM YUM!!

Take Successes Any Way You Can.....

So yesterday was not a great day....If you read my post from yesterday then you will know that I had a pretty emotional day!  I could not seem to hold it together yesterday...this Super Woman's cape was not flying in the wind, it was wrapped around her like a security blanket! LOL

Now today I decided was going to be a better day....so I got out of bed, put my big girl panties on, and decided "Let's Do This!"  I began cleaning and hanging pictures....making this house a home!  The kids seem to be fairing well with this whole situation so I should too!

After cleaning I made a list of items I needed from the store, and manned with my trusty map app on my phone, the boys and I set out for a drive.  I got slightly lost on my first attempt in the direction I wanted to go, but I realized my mistake before I had gone too far and I was able to correct my mistake. I didn't get flustered...I kept my cool!  Then once we were close to our destination, we once again realized we weren't exactly where we needed to be.  I could see the store I wanted to go to but I was not on the right road.  Yes, I was having all of these troubles even with the map app, but that is ok.  I was navigating on my own and with the app. We made it to the store and picked up the item that Clint needed.  Then it was time to head home.  I called Clint and we decided to meet at one of the many malls here in Abu Dhabi for dinner, so instead of going home, I now needed to find my way to the mall.  Plugged the destination into the app and then set off....  The boys and I thought at first that the app had gone crazy...we thought we were about to do some off road driving, but I ignored the apps direction, made it recalculate, and we pressed on!  We successfully made it to the mall and then I successfully made it home after dinner!

So as the title says...take successes any way you can!  No matter how small they may be, they are still to be considered a success!  At least that is how I look at it!  Until next time my friends....
