I am not going to be doing full daily menus... mainly I am just going to post "What's For Dinner?" menus. For those who aren't familiar with Dinner being used as the word for the evening meal, you could also call it Supper. Those are interchangeable words in Texas my friends! So this week's "What's For Dinner?" menu is as follows:
Monday (which was last night): Baked Garlic & Herb Chicken with Potatoes
Tuesday: Taco Tuesday (Chicken Tacos.... this is a tradition we started back home.. Tacos on
Tuesdays, pretty much each week the Tuesday meal will be tacos..LOL)
Wednesday: Beef Tips with Gravy and Rice
Thursday: Dinner with Clint's co-worker ( so I will not be cooking tonight)
Friday: Beef Roast with carrots and potatoes *
Saturday: Roast Beef Sandwiches (from the roast on Friday)
Sunday: Chicken Enchiladas
*Plans may change based on the lunch time plans. Friday we have Red Lobster planned for lunch, so we may need to eat a lighter dinner than roast and potatoes!

You so need to post the recipe for Coke Gravy!!! Sounds yummy since all I ever drink is coke and I have not mastered gravy that is not in a pouch! LOL Loving your blog! God Bless You and Your Family!!! <3

DeleteWell Christee...the coke gravy is nothing more than this.... coat your meat lightly in flour, and then in a little bit of oil in a skillet sear all sides of the meat. You aren't trying to cook it through... you are just wanting to brown the outsides. Put the meat in the crockpot, then pour 1/2 can of coke over it....no other liquid needed. Then cook on low till done! If you think it is drying out during the cooking process you can add a little water...just a little at a time to keep things from drying out. Then about an hour to 30 minutes before you eat, skim about 1/2 cup of the liquid out into a bowl, add about 1 1/2 Tbsp of cornstarch to the liquid and stir well...add this to your meat and the remaining liquid. This will thicking everything....serve and enjoy! Salt and pepper to taste during and after cooking!!
