Whipping Cream is "Whisky" Business

So dinner tonight was a traditional chicken and rice casserole... the boys ate it up!  Then I decided to treat us all to some dessert!  I had some strawberries that I had cut up two days ago and put in the freezer because I didn't want them to go bad.  Joshua has been begging to eat them!  So I promised him last night that I would make something today using those strawberries...  So how about strawberry shortcake for dessert?!  I think...yes!  Super simple...

1 can of biscuits
chopped strawberries sweetened with a little sugar
heavy whipping cream (lightly sweetened--you will have to add the sugar to your taste)

Bake the biscuits...and while they are baking start whipping the cream!

Well, only one problem... I don't have a whisk or a mixer/blender of any kind!  So how am I going to make whipped cream now????  Well you can't stop this Family & Consumer Science teacher (aka Home Ec)!  This is not my first time in the kitchen...  So what did I do?  I went old school friends... two forks and a fast moving arm!
 Well it didn't make the cream light and fluffy but it did thickening it enough to make a great topping on the shortcakes....

They were so yummy!  This will definitely be a dessert we will repeat!  It is so simple and so good!  I hope that you will try it too!

  1. "Old School"; I love it!! I use two butter knives to cut shortening when making pie crust for the longest time; until I got my pastry cutter. ;-) I'll have to remember this tip as well.
